 Now remember that yummy marinated kale I made, here is another plant-powered meal option paired with some Makati Lentils. Lentils made Indian makati style is one of my favorites and go-tos. Add your spices, organic tomato, curry leaves, dill and simmer. Then simple pair on top of your marinated kale and you have another scrumptious plant-powered meal.

As the Summer days get longer and hotter, it is best to plan  for the day ahead. This dish is always best if marinated the night before. Here we have an organic kale salad with my very special and popular balsamic dressing. Now I can't give you all the top secret ingredients of my dressing as it may be bottled and seen on shelves soon at your local market in the near future. However, suffice it to say that you can use any of your favorite spices to make your dressing from scratch. In a time crunch, then buy one of your already bottled dressings. Alwayss marinate in a glass or ceramic dish. It will feel great when you get requests from family for a particular dish they love!

Morning is the best time to prepare for a long day ahead. Pictured here is my plant-powered meal option for the day. This is a quick packable lunch for the work 💻 or beach sun ☀️ day ahead. Organic carrot 🥕 "tuna" with seaweed flakes, spices and vegan mayo sensed to taste. I like a little spice, so I definitely don't forget the cayenne pepper in this meal to keep the circulatory system healthy and clean! Paired with organic lacinato kale open-faced on a lightly pan-toasted spelt wrap. Here's to real food and your health! In the Weeds: Red Clover

Who did I spot this morning on my way to start my day? Red Clover (Trifolium Pratense) pictured below was smiling in the parking lot of a North Shore-LIJ Health System. She is a friend to women and used throughout herbal generations because of  rich in isoflavones which are plant chemicals that when brewed as a tea act like estrogens (phytoestogens). A wonderful aid for hot flashes, PMS issues, breast health and improved blood circulation. I am in love with red clover. She is my friend as well. Don't confuse her with Milk Thistle in your garden though as they look slightly similar. Wonderful as a hormone balancer, breast health aid, circulation of blood and osteoporosis prevention. Wonderful as a tonic tea hot or cold....no sweetener needed as it also sweet. Brew overnight and enjoy! RICH in calcium, chronium, magnesium, niacin, phosphorus, potassium, thiamin and Vitamin C. Reflections on April Rain

Wow! Did you hear the rain last night! If you live in the New York City region you could not miss it. The thunder and lightning was magical and I stayed up until the early hours of the morning enjoying the sounds and reflecting: “April showers bring May flowers” and what does this really mean to the herbalist? Thunder recharges the Earth by bringing more nitrogen to the atmosphere and as a result we see a turbo boost in plant growth.  God’s Earth demonstrates the power of birth, resurrection, and new life and it is visible to us even in our City with the popping up of flower buds on trees and dandelions through the cracks of the sidewalks. What herbs have you noticed popping up lately in your neighborhood? These new plants are waiting to serve us and be noticed.

Protein-packed breakfast green smoothie

“Where do you get your protein in the morning? “

“I know someone that is vegan and they look very sick and skinny?”

“I couldn’t be vegan that is just too hard for me because I love bacon in the morning!”

If you are a soul-committed vegan and have seen the power of living food change your health and your outlook on life, you are bound to hear some of these questions or statements, particularly around holiday gatherings or family functions. In my experience, it is best not to speak about the powers and benefits of a vegan lifestyle as your family eats their omelet and fried bacon around the dining table! Instead, when visiting your non-vegan friends and family make yourself a quick breakfast, so that you are not taking up too much space and time in your guest’s kitchen and it will leave you full for breakfast and well satisfied.

Here are the ingredients for my Protein-Packed Breakfast Green Smoothie (pictured above in my wellness kitchen) that I love for breakfast and it tastes so yummy: 

Spinach – alkalizes the body, source of omega 3 fats, loaded with vitamins and trace minerals and iron

Hemp Seed Powder – high in protein, fiber

Mango – rich in fiber, antioxidants, vitamin C, A and E-which supports hormones

½ Banana – high in potassium, contains tryptophan, which is converted into serotonin -- the happy-mood brain neurotransmitter

Pineapple – rich in bromelein - a great anti-inflammatory and help digest protein more efficiently

Coconut Milk
(You can try with an alternative plant-based milk  such as almond as well)

1-2 Dates
– rich in fiber and sweetness

FULL PINK MOON

At the period of a full moon all of nature is more vital and active energetically.  During this period it is a great time to initiate purification and stepping out of old habits or behaviors. The full moon is a natural transformation period and you as well can align yourself with nature.

According to the Farmers Almanac’s today’s Full Pink Moon which occurs in the month of April came from the herb moss pink, or wild ground phlox, which is one of the earliest widespread flowers of the spring.

Get some green in your life! Right now I am in a major love affair with Matcha Green Tea powder!

Matcha tea is a high-quality green tea that is stone-ground after being picked. It is always best to stick to a brand that is certified organic as Matcha greatly varies in quality.

During the last three weeks  the nutrient-rich young leaves picked from the tips of shade-grown Camellia sinensis plants, are covered to deprive them of sunlight. This causes a tremendous increase in chlorophyll production in the new growth of these plants. The resulting high levels of chlorophyll in Matcha Green Tea give this tea its beautiful vibrant green color and also serves as a powerful detoxifier capable of naturally removing heavy metals and chemical toxins from the body.

Researchers aren’t entirely certain how Matcha Green Tea has such a positive effect on cholesterol, however studies of different populations have shown that people who drink Match Green Tea on a regular basis have lower levels of LDL (bad) cholesterol while at the same time displaying higher levels of HDL (good) cholesterol.

Matcha Green Tea has been used by Chinese Daoists and Japanese Zen Buddhist monks as a means to relax and meditate while remaining alert. Now we know that this higher state of consciousness is due to the amino acid L-Theanine contained in the leaves used to make Matcha. I have found it boost memory and enhances calm. It is wonderful for all fellow yogis and I find it useful in meditation as well!

Green tea contains potent antioxidants called catechins, which scavenge for dangerous free radicals in the body and boosts the immune system. The most powerful catechin found in green tea is EGCG (epigallocatechin gallate), which is believed to be a powerful anti-carcinogen. A 2003 University of Colorado study confirmed that drinking 1 cup of matcha green tea has 137 times the amount of antioxidant EGCG compared to a conventional cup of green tea.

Matcha powder also boosts your body’s metabolism and support a healthy body weight. It is also great in smoothies and ice cream!
